Polenta Pizza

This pizza does not have the doughy bread or stringy cheese you are used to but is an amazing alternative when you are in the pizza mood! It takes some time to make Polenta correctly- but it is worth it!!! I just tried this recipe from a book I checked out at the Library. "The Essential Vegetarian Cookbook published by Whitecap Books.

Cook polenta first. (boil 4 cups water then add 1 cup polenta, whisk immediately. Turn heat to low then use wooden spoon and stir for approx. 20 min or until the polenta is able to stay away from sides of pot.) Slice some onion, green pepper, and cherry tomato and sit to side. Let polenta cool on a pizza pan. (spread it thin like pizza crust) Cook in oven on 200 for about 10 min. When crust is hot, add two spoonfuls of basil pesto (homemade is always best) spread like a pizza sauce. Add veggies and cook for an additional 20 min. This pizza takes some prep but it is soooo worth it!
