Summertime Soup

This soup is the easiest thing in the world.

In a crock pot add:

Yellow Onion (diced large)

2 Bell Peppers (diced)

1 Jalapeno

2 Carrots (chopped of course)

Black Beans (I use organic canned)

Cherry tomatoes

Cilantro

Vegetable Stock, the whole container (I use organic)

Ground Cumin (use as much as you want of the spices)

Chili Powder

Cayenne Pepper

Salt

Cook for at least 3 hours. Dice some fresh avocado and basil for the top. If you really want to splurge you can have some tortilla chips with the soup! I love it anytime of year.
