Root Vegetables: My favorites are beets and turnips. There are so many nutritional benefits of these root vegetables and there are so many great ways of cooking them. I have recently made "mashed turnips" just like you would make mashed potatoes and they were amazing. I have gotten to the point where I crave the richness and meatiness of these roots. Here is one of the newest recipes I want to try.
